DESIGN SPOTLIGHT - Kiu Japanese Restaurant


Our team worked with Koji Zenimaru and Jason Matsubara’s to bring their latest venture, Kiu a Japanese restaurant, to life. The name Kiu means ‘joyous rain’ and signifies a renewal of life, a perfect representation of the cuisine and overall atmosphere offered at the venue. Zenimaru and Matsubara’s goal was to deliver memorable food experiences that would create lasting memories for each one of their guests.



The menu consists of a variety of dishes, both traditional and contemporary trends from Japan. There are popular items such as sashimi, izakaya tapas, and ramen noodles. Guests can choose from an assortment of appetizers, salads, and mains, or enjoy sake and oysters at a custom built bar that faces the Courtyard Marriott, which is still under construction. Russell Hendrix had the pleasure of working alongside Matsubara to transform the 5,500-square-foot area into a contemporary, upscale Japanese restaurant. The decor consists of walnut table tops, black leather chairs and striking red accents throughout the space. Back of house is just as impressive with a fully equipped kitchen, dish room, wait station, sushi, ramen and sake bar.

The main kitchen houses an impressive array of commercial equipment: everything from Hatch mobile tray lowerator to a large double-sided Spring Air hood package. Russell Hendrix provided walk-ins, fryers, and custom fabricated wok ranges that are equipped with a condiment shelf and two swing faucets. The entire bar area is equipped with True undercounter refrigeration and custom stainless steel counter tops. The layout of the kitchen and bar are designed to improve employee efficiency and maximize space wherever possible. The sake bar contains a True back bar cooler with three glass doors which can hold up to 152 six-packs or four half-barrel kegs. The triple-pane glass doors, LED lighting and adjustable PVC-coated wire shelves provide ample room to display a wide selection of beer, wine, sake, mixed drinks and cocktails. The bar also features specialty equipment such as an undercounter beer fridge and glass chiller, designed to quickly chill glasses and mugs to ensure beverages are always served cold.





From consultation to blueprints, building to equipment, Russell Hendrix was there every step of the way. The goal was to bring Zenimaru and Matsubara’s vision to reality so that they in turn could deliver on their promise: exceptional food and unforgettable experiences.
